Kumara, mango and nut salad with coriander dressing
- Peel kumara and cut into 2cm pieces. Cook in boiling, salted water for 10 to 15 minutes or until just tender. Drain.
- Peel mango and cut flesh away from the stone. Cut mango into cubes.
- Place oil in a blender. Crush garlic and peel. Add to blender with coriander, lime rind, lime juice, sugar and salt. Blend to combine.
- Place kumara, mango and cashew nuts in a bowl and mix through coriander dressing.
