Moroccan fish is excellent for this dish. Sumac is a spice available from supermarkets.
- Peel onion and chop finely. Crush garlic, peel and chop finely. Peel rind from lemon and cut into thin strips. Heat oil in a large frying pan and add onion, garlic, lemon, sumac, cumin and crushed chilli. Cook stirring often for 2 minutes.
- Push tomatoes through a sieve and add to onion mixture. Cut fish into 6cm pieces. Add to tomato mixture and cook over a medium heat until fish is cooked through. Serve garnished with coriander and lemon wedges.
