Spicy North African couscous
- Place couscous in a bowl with first measure of oil. Add salt. Pour over boiling water. Cover and allow to stand for 10 minutes. Fluff up couscous with a fork. Peel shallot and chop finely. Crush garlic, peel and chop finely.
- Heat second measure of oil in a small saucepan. Add shallot, garlic, cumin, ginger, nutmeg and cloves. Stir often until shallots are soft. Wash currants under hot water. Add currents, 1 tsb lemon rind from the lemon and spice mixture to couscous. Stir through chopped almonds, parsley, coriander, mint and pepper.
