Goats' cheese rolls with red pepper sauce
Red pepper sauce
- Cut goats milk feta cheese into four even rectangles. Brush or spray the filo sheets with oil and stack on top of each other. Cut the filo stacks into four even pieces and place a piece of cheese on one end of each stack. Fold pastry around cheese to create a parcel.
- Place parcels seam side down on a baking tray and spray with oil. Bake at 180 degrees C for 30 minutes or until golden. Serve warm with red pepper sauce.
- To make sauce: Peel onion and crush and peel garlic. Chop both finely. Cut peppers in half, remove seeds and chop flesh finely. oelt butter in a saucepan and fry the onion, garlic and peppers with sumac until peppers and onions are soft. Purée in a blender or food processor. Add stock and reheat.
