Makes 4 cups
- Peel onion and chop finely. Heat oil in a large saucepan and cook onion until just soft.
- Wash red lentils. Add to onion and cover with water. Bring to the boil with salt and turmeric powder. Cook for 20 minutes or until soft. Place tomatoes in a bowl. Pour over boiling water and leave for 10 minutes.Drain.
- Peel and chop tomatoes roughly. Peel 5cm thick root ginger piece and grate. Mix tomato, ginger and coconut cream through dhal. Simmer a further 10 minutes. Serve scattered with chopped coriander and sprinkled with garam masala.
