Salmon with lemon caper drizzle
2 fresh salmon fillets 1 tablespoon ginger marmalade 2 teaspoons grated lemon rind ¼ cup lemon juice 1 teaspoon capers 2 tablespoons chopped roasted almonds Place salmon in a baking dish and grill
- Place salmon fillets in a baking dish and grill for 5 minutes or until cooked to your preference. Put ginger marmalade, 2 teaspoons grated lemon rind and 1/4 cup lemon juice in a small saucepan.
- Stir well and bring to the boil. Remove from heat and add the capers. Pour the sauce over the salmon fillets. Scatter with chopped almonds and serve immediately.
