Apple and Coconut Porridge with Blueberry Syrup
Porridge gets a makeover in this coconut and apple version, complete with sweet berries on top.
|¼ tsp||Unsalted butter|
|1½ cups||Rolled oats|
|½ cup||Desiccated coconut|
|2 Tbsp||Brown sugar|
- Place water, milk, salt, oats and coconut in a saucepan and bring to the boil. Stir in apple (peeled and grated), cinnamon and brown sugar, then turn down the heat. Simmer for 5 minutes, stirring regularly, until the mixture is thick.
- Combine blueberries (fresh or frozen) and maple syrup in a saucepan until they just begins to boil, then remove from the heat. Serve hot or cold over porridge.
- Spoon porridge into bowls, top with blueberry syrup and offer a jug of milk or cream on the side.
