Coconut spinach soup with noodles and prawn crackers
- Crush garlic, peel and chop finely. Heat oil in a saucepan. Add garlic and green curry paste. Wash spinach and chop roughly. Stir into paste mixture. Add chicken stock. Cook until spinach is tender. Add to food processor or blender and pulse until smooth. Return to saucepan with coconut milk. Bring to the boil, then add noodles. Cook until noodles are soft.
- Serve with prawn crackers.
