Saucy chocolate banana puddings
|½ cup||Caster sugar|
|⅔ cup||Self raising flour|
|2 Tbsp||Cocoa powder|
- Heat oven to 170 degC fan bake. Combine butter and sugar in a bowl and beat with an electric mixer until pale and creamy, then beat in bananas and eggs, one at a time. Fold in sifted dry ingredients.
- Divide mixture between four individual 1/4; cup capacity ovenproof pudding dishes.
- For the sauce, combine the brown sugar, cocoa and boiling water and stir to form a smooth liquid, then pour over pudding mixture to distribute evenly between bowls.
- Bake for 35 minutes or until sponge has risen and set. The puddings are best slightly undercooked so a layer of sauce forms underneath the sponge. Serve hot with cream or ice cream, if desired.
