Simple apple and pear tartlets
( MAKES 8 tartlets )
- Heat oven to 200C.
- Cut sheets of pastry into four, giving you eight equal squares. Place squares on two baking trays. Remove cores from apple (peeled and halved) and pear halves and finely slice the flesh of each, taking care to keep the sliced fruit halves from breaking up.
- Arrange one sliced apple or pear half in the centre of each square of pastry. Bake for 20 to 30 minutes, or until pastry is puffed and golden brown.
- Make a glaze by heating the apricot jam and lemon juice of a lemon in a saucepan, then sieve to remove any fruit pulp. Brush fruit with apricot glaze and dust pastry with icing sugar if desired. Serve warm.
