Grilled halloumi with apple, carrot & tahini salad
|1 tsp||Fresh ginger, grated|
|1 clove||Crushed garlic|
|2 tsp||Honey, clear mild|
|2||Lemons, zest of 1, juice of 2|
|1||Red chilli, desseded and finely chopped|
|1 Tbsp||Tahini paste|
|4 Tbsp||Toasted sesame oil|
|1 Tbsp||Water, warm|
- Combine dressing ingredients.
- Toss the salad ingredients together, season with 5 to 6 tablespoons of dressing.
- Heat barbecue, drizzle halloumi slices with oil, sear on the hot griddle until brown. Season with pepper only.
- Divide the salad between plates, top with halloumi, a drizzle of dressing and any spare toasted sesame seeds. Serve quickly as the halloumi becomes rubbery as it cools.
