White chocolate chip cookies
- Heat oven to 170C fan bake. Line an oven tray with non-stick baking paper.
- Combine butter (softened), sugar, vanilla and condensed milk in a bowl and beat well with an electric mixer, until pale and creamy. Stir in the flour and baking powder, then stir in white chocolate bits.
- Roll heaped tablespoons of the mixture into even-sized balls and place on prepared baking tray. Press with a fork to flatten. Bake for 15 minutes or until golden brown. Transfer to a wire rack to cool. Store in an airtight container.
Tip: For a quick pudding idea, sandwich these cookies together with ice cream (we used hokey pokey) and serve as an ice-cream slice.
