Quick-roast lemon chicken

- Heat oven to 190 degC. Lay skinless chicken breasts on a board. Cut two deep slashes in each chicken breast and insert a lemon slice into each slash.
- Transfer chicken to a low-sided oven pan. Season with salt and dust with a pinch of cayenne pepper.
- Place crushed garlic, olive oil, and lemon juice of 1 lemon in a bowl and stir to combine, then drizzle over chicken. Roast for 20 minutes. Garnish with sprigs of thyme and serve immediately.
