Sweet corn and chive muffins
- Heat oven to 210 deg C. Lightly spray a standard muffin pan with oil. Place lighly beaten eggs, olive oil, low fat milk, drained sweet corn, finely diced onion, red pepper and fresh chives in a bowl and stir to combine.
- Sift flour, baking powder, chilli powder and salt into another bowl and make a well in the centre. Pour wet mixture into the well and stir briefly to just combine.
- Spoon mixture into 10 holes of muffin pan and bake for 15 to 20 minutes or until muffins spring back when lightly pressed. Cool on a wire rack.
