- Place peeled, floury potato (agria potatoes) into even-sized pieces in a saucepan, cover with cold water, add salt and bring to the boil. Boil gently until very soft.
- Drain potatoes and return to the pan over a low heat for 1 minute, shaking the pan to drive off as much moisture as possible - this makes the potatoes dry and fluffy.
- Remove pan from the heat and mash potatoes to remove lumps.
- Beat in melted butter and enough warmed milk or cream to whip mash to a fluffy, creamy consistency. Season well with salt and pepper.
