- Place sausages in a saucepan and cover with cold water. Bring to the boil, then turn down the heat and simmer for 5 minutes to partially cook. Remove sausages to a bowl and set aside. once cool enough to handle, cut into chunks.
- Cook potato in boiling salted water for 5 minutes or until just tender. Drain and set aside. Heat a frying pan, add oil and leek and cook for 5 to 10 minutes until softened. Heat oven to 170 degC.
- In a bowl, beat eggs with milk and cream, then stir in cheese. Season well with salt and pepper. Stir in sausages, potato, leek and parsley.
- Pour mixture into a greased flan dish. Bake for 35 to 45 minutes or until set in the middle. Slice to serve.
