Brussels sprouts with bacon and almonds
- Cut Brussels sprouts in half, then shred finely. Blanch in boiling salted water for 1 to 2 minutes then drain well.
- Heat a wok or large frying pan, add oil, rindless coarsely chopped bacon and almonds, and stir-fry for 3 to 4 minutes to brown. Add Brussels sprouts and toss well over heat to stir-fry for 2 to 3 minutes. Season well with sea salt and pepper to taste and serve immediately. Serves 6 as a side dish.
Tip: Slicing brussels sprouts does take a little time, but it turns this vegetable into a taste sensation. By altering the texture of the Brussels sprouts, we have found that even people who think they don't like them can be convinced this simple vegetable is delicious.
