Stir-fry pork and baby corn
( SERVES 4 )
- Heat a wok or large nonstick frying pan, add a little oil then stir-fry pork, sliced into 2cm wide strips in two to three batches for 2 to 3 minutes until brown on all sides. Remove to one side.
- Add grated ginger and vegetables ( spring onions, cut into long thin strips,red peppers, cut into thin strips, with seeds removed, whole baby sweet corn, drained) and stir-fry until brown. Add soy sauce and a little water if necessary to finish cooking the vegetables. Return pork to the pan, toss and stir-fry to heat through.
- Sprinkle with toasted sesame seeds and serve immediately with steamed rice and extra soy sauce on the side, if desired.
