Ginger clay-pot chicken

Serves 6 1 free-range or corn-fed chicken Salt and freshly ground black pepper 2 tsp grated fresh ginger 1 clove garlic, chopped ½ tsp Chinese five spice powder 1 tbsp brown sugar Grated zest of
- Wash chicken, inside and out, under running cold water. Pat dry with paper towels. Season with salt and pepper and coat with grated ginger, chopped garlic, five spice powder, brown sugar and grated zest of 2 oranges.
- Stuff chicken cavity with sliced oranges and a 2cm slice of ginger. Place chicken in a clay pot, breast side up. Pour over orange juice and soy sauce. Cover pot with lid and place in a cold oven. Turn oven temperature to 220 degC and cook for 1 hour.
- Remove cover and cook for 15 minutes more to brown the chicken. Serve with juices from the clay pot.
