Classic lemon delicious
- Heat oven to 160 deg C. Grease six 180ml capacity ramekins with butter.
- Place softened butter and sugar in a bowl and beat with an electric mixer until pale and creamy. Whisk in lemon zest and juice from one lemon, egg yolks only and milk, then fold in flour.
- Whisk egg whites to soft peaks and carefully fold into the mixture. Spoon into prepared dishes and bake for 15 to 20 minutes until puffed and golden.
- Remove from oven, dust with icing sugar and serve immediately as these souffle-like puddings will quickly deflate.
