Mango cheek brulee

- Slice cheeks (the fleshy part on either side of the stone) from the mangoes to give four portions. Take the tip of a sharp knife and score a diamond pattern deep into the flesh of each mango cheek - this separates the flesh into bite-size pieces and makes the mango easier to eat.
- Heat a grill on high. Place mango cheeks on a baking tray and evenly sprinkle surface of each with 2 tablespoonfuls of caster sugar. Grill for 5 minutes or until sugar caramelises (brulées) and turns dark brown.
- Place crème fraîche and brown sugar in a bowl and mix to combine. Serve hot, grilled mango cheeks with brown sugar crème fraîche on the side.
