
Chilli chickpea salad

Ingredients
150 g | Snow peas |
1 | Red onion |
2 cups | Baby rocket |
400 g | Chickpeas |
¼ cup | Sweet chilli sauce |
1 to taste | Salt & freshly ground pepper |
3 Tbsp | White wine vinegar |
1 | Red pepper |
Directions
- Cook trimmed peas in boiling salted water for 1 minute, then drain and plunge into ice-cold water.
- Drain peas well and toss with all remaining ingredients except red pepper. Season with salt and pepper to taste and serve garnished with finely sliced red pepper.
Tip: Plunging cooked snow peas or other green vegetables into ice-cold water stops the cooking process and ensures they remain bright green.
