Pork, vegetable and noodle stir-fry
Substitute the Singapore noodles for any other noodle of your choice - egg noodles and rice noodles both work just as well.
- Cook Singapore noodles (or substitute any other noodles, if preferred) in a saucepan of boiling water for 2 minutes or according to the packet instructions, then drain well.
- Heat a wok or frying pan, add a little oil and stir-fry mince to brown. Remove to one side. Add a little more oil and red peppers, thickly sliced with seeds removed, green beans, trimmed and blanched and spring onions, trimmed and cut into lengths for 2 to 3 minutes over a high heat.
- Add hoisin sauce and dark soy sauce, then return pork to the pan, tossing well. Add noodles and stir-fry, tossing quickly, to heat through. Serve in bowls, scattered with sesame seeds.
