Filo pastry triangles with blue cheese and apple
- To make the filling, sprinkle the grated apple with lemon juice to prevent browning. Mix in blue cheese and season with salt and pepper. Gently squeeze mixture to remove some of the moisture so the pastries don't become soggy.
- Spread a sheet of filo pastry on a work surface, and brush pastry lightly with olive oil. Lay a second sheet on top of the first and brush with oil.
- Cut prepared filo into six strips widthways. Place a teaspoon of filling at the end of one strip and fold end in to form a triangle. Continue folding the pastry strip until you are left with a wrapped triangle parcel. Repeat process with remaining pastry and filling.
- Heat oven to 200degC. Place filo triangles on a baking tray and lightly brush with oil. Sprinkle pastries with sesame seeds. Bake for 10 minutes or until golden brown and crisp.
