Crispy noodle and vegetable salad
|2||Carrots, peeled and coarsely grated|
|2||Celery stalks, finely chopped|
|1||Red pepper, finely sliced with seeds removed|
|2||Spring onions, sliced|
|½ cup||Fresh coriander|
|½ cup||Cashew nuts, roasted|
|150 g||Crispy noodles|
- Combine salad ingredients in a large bowl. Place dressing ingredients in a small bowl and stir to combine.
- Pour dressing over salad and toss well. This salad is best served immediately after tossing, so the noodles don't become soggy.
