Marinated asparagus salad with feta and olives
Serves 4 as a side dish 300g bunch asparagus ¼ cup extra virgin olive oil Salt and freshly ground black pepper 1 cup baby salad greens 100g feta cheese, crumbled ½ cup pitted black olives 1.
- Finely slice asparagus on an angle, discarding the woody ends of the spears. Place sliced asparagus in a bowl, combine with oil and season with salt and pepper. Leave to marinate for at least 30 minutes, or preferably overnight.
- Toss asparagus and marinade with baby salad greens and arrange on a serving platter. Serve scattered with crumbled feta and pitted olives.
