Orzo pasta salad with avocado, coriander and lime
( SERVES 4 )
Serves 4 as a side salad
- Cook orzo in plenty of boiling salted water for 8 to 10 minutes or until just tender to the bite. Drain, rinse in cold water then drain well.
- Combine cold orzo with remaining ingredients and toss well. Adjust seasoning with salt and pepper to taste.
