Tuna salad nicoise
( SERVES 4 )
- Cook beans in salted, boiling water for 2 to 3 minutes, then drain and plunge into ice-cold water to cool completely. Cook potatoes in salted, boiling water until tender, then drain and cool and slice in half.
- To make the dressing, blend ingredients together and season with salt and pepper to taste.
- Assemble salad components on a serving platter and drizzle with dressing to serve.
