Pasta with turkey, peas and beans
|1||Garlic clove, crushed|
|300 g||Pasta shapes|
|2 Tbsp||Extra virgin olive oil|
|1 to taste||Salt & freshly ground pepper|
|1 cup||Frozen baby peas|
|300 g||Green beans, trimmed and sliced|
|100 g||Snow peas, trimmed and halved lengthways|
|1½ cups||Turkey, shredded cooked (or chicken)|
|1 to serve||Parmesan cheese, shaved|
|¼ cup||Fresh basil, torn|
- Cook pasta in plenty of boiling, salted water for 8 to 10 minutes or according to packet instructions until just tender to the bite. Drain well and toss with garlic and olive oil, then season with salt and pepper.
- At the same time, cook peas and beans in boiling, salted water for 2 minutes, add snow peas at the last minute to cook for just 30 seconds.
- Drain well and toss with hot pasta and turkey. Serve in hot pasta bowls, scattered with parmesan and basil
