Orzo pasta with courgettes and salmon
- Cook pasta in plenty of boiling, salted water for 8 to 10 minutes (or according to packet instructions) until just tender. Add the courgettes to the pasta pot for the final minute of cooking.
- Drain well and toss with pesto and salmon. Season with salt and pepper to taste. This dish can be served hot or cold as a salad.
Tip: other small pasta shapes also work well in this salad. For a change, try spirals, bows, penne or macaroni.
