Blueberry Yoghurt Parfaits
- In a saucepan, combine two punnets of blueberries with the sugar and orange juice and slowly bring to the boil, stirring until the sugar dissolves. Simmer for two minutes, then remove to a bowl to cool.
- Divide cold blueberry mixture into four serving glasses. Scatter the broken meringues over the mixture and spoon yoghurt on top.
- Just before serving, scatter with remaining blueberries and a little orange zest.
