These delicious, caramel-flavoured biscuits make an afternoon tea very special.
- Heat oven to 180 degC. Line two baking trays with nonstick baking paper.
- Place butter and sugar in a bowl and beat until pale and creamy. Beat in golden syrup. Warm milk and combine with baking soda. When frothy, add to creamed mixture.
- Stir in peel and sultanas, then stir in flour, mixed spice and salt, working together until combined into a dough.
- Place spoonfuls of mixture onto prepared baking trays. Bake for 15 minutes until golden brown. Remove to a wire rack to cool. Store in an airtight container.
