Spinach rice pie
- Cook rice in plenty of boiling, salted water for 12 minutes. Drain well and transfer to a bowl. Heat oven to 180 degC. Grease an ovenproof dish with butter.
- Heat a saucepan, add oil and finely diced onion, and cook over a medium heat for 5 to 8 minutes until softened. Add cooked onion to the rice. Squeeze excess moisture from the thawed spinach - add spinach to the rice and mix to combine.
- Beat eggs together with milk and cheese, then stir into rice mixture. Season well with salt and pepper. Pour mixture into prepared oven dish. Bake for 30 to 35 minutes or until mixture is firm and set.
Tip: We recommend serving this pie with hot tomato pasta sauce on the side.
