Salmon skewers with rocket and tomato salad
Rocket and tomato salad
- Cut skinless fresh salmon fillet, pin bones removed into thick strips and place in a shallow ceramic dish. Pour over lemon juice and olive oil, toss well to coat and leave to marinate for 10 minutes.
- Drain salmon, thread strips onto skewers and season with salt and pepper. Cook on a preheated barbecue or grill for 1 to 2 minutes on each side. Serve with Rocket and Tomato Salad.
To prepare Rocket and tomato salad:
- Combine all ingredients in a salad bowl ( quartered small tomatoes, coarsely chopped rocket, fresh parsley, thinly sliced spring onions, white wine vinegar, extra-virgin olive oil, salt and freshly ground black pepper)
- Season with salt and pepper and toss well.
