Spicy couscous with calamari

Spicy couscous with calamari

Ingredients

2 cloves Garlic
1 to fry Olive oil
½ tsp Turmeric
1 tsp Ground cumin
1 tsp Ground coriander
1 cup Chicken stock
1 cup Couscous
300 g Calamari rings
1 Red onion
3 Courgettes
1 Red pepper
1 Salt & freshly ground pepper
¼ cup Fresh coriander

Directions

  1. Heat a saucepan, add a little oil and the crushed garlic and spices, and fry for 30 seconds to release flavours. Add stock and bring to the boil. Remove pan from the heat and stir in couscous. Cover and leave to steam for 10 minutes.
  2. Meanwhile, heat a nonstick frying pan, add a little more oil and stir-fry calamari(drained on paper towels) for 5 minutes to brown. Remove to one side. Add peeled and diced onion, courgettes,halved lengthways and sliced and red pepper,cut in chunks with seeds removed and stir-fry for 3 to 4 minutes to brown.
  3. Fluff up couscous with a fork. Stir through cooked calamari, vegetables and chopped coriander or parsley. Season with salt and pepper to taste.
