Spicy chicken salad
|1 cup||Mung bean sprouts|
|3 Tbsp||Mint leaves|
|3 Tbsp||Fresh coriander|
- Remove chicken flesh from bones, discard skin and bones. Shred or slice chicken flesh into bite-sized pieces.
- Coarsely grate peeled carrots. Halve cucumber, remove and discard seeds, then finely slice the flesh. Mix all salad ingredients together in a bowl.
- For the dressing, whisk all the ingredients together until sugar has dissolved. Pour over salad, toss well and serve.
Tip: A chicken salad is a great way to make a cooked chicken go further so it feeds a crowd.
