Lemon yo-yo biscuits
Makes 10 pairs
- Heat oven to 180 deg C. Line two baking trays with nonstick baking paper.
- In a bowl, beat butter, sifted icing sugar and zest of one lemon together until thick and pale. Sift flour and custard powder into the butter mixture and stir to combine into a dough.
- Roll dough into 20 even-sized balls, place on prepared trays and flatten with the palm of your hand. Bake for 15 minutes or until pale golden, then remove to a wire rack to cool. once cold, sandwich yo-yo biscuits together with lemon filling.
- To make lemon filling, combine all ingredients in a bowl and beat until smooth and creamy. (using finely grated zest of half a lemon and ensure the water is boiled)
Tip: To make even-sized balls of dough, use a measuring tablespoon or a small ice-cream scoop.
