Spiral pasta with sausage sauce
- Place small flavoursome sausages (we used spicy lamb sausages) in a saucepan of cold water. Bring to the boil, then turn down the heat and simmer for 5 minutes to partially cook sausages. Drain well and cut into chunks.
- Heat a frying pan, add oil and sausages, then fry over a medium heat until browned all over. Add the finely diced onion and cook over a medium heat for 5 minutes to soften. Add crushed garlic, then cook for 1 minute more.
- Cook pasta in plenty of boiling salted water for 10 to 12 minutes or until just tender to the bite. Add frozen vegetables to the pasta for the final 2 minutes of cooking time.
- Drain well and add to the frying pan with the sausages. Season with salt and pepper, then stir-fry over heat for 2 minutes to combine. Serve in bowls topped with a dollop of basil pesto (to serve) and garnished with basil leaves.
Tip: When cooking pasta, there is no need to add oil to the water. The only trick to cooking pasta well is to use a big pot and plenty of water - enough for the pasta to move around in the pot, which lets it cook evenly. Give it a good stir initially and the pasta will not stick together.
