Pear, rocket, walnut and cheese salad
|2||Pears, finely sliced with core removed|
|150 florets||Rocket leaves|
|½ cup||Walnuts, toasted|
|150 g||Blue cheese, creamy, or goat's cheese, sliced|
- Combine rocket and pears on a serving platter.
- Scatter with walnuts and either blue cheese or goat's cheese, as preferred.
- To make dressing, whisk vinegar and oil together and season with salt and pepper to taste.
- Pour dressing over salad and serve. Serves 4.
Tip: Any well-flavoured cheese works well in this salad combination. Try tasty cheddar, parmesan shavings, gruyère or feta for a change.
