Winter vegetable stew
- Peel all the vegetables and cut into even-sized pieces. Heat oil in a large saucepan, add ginger (grated) and spices and fry for 30 seconds.
- Add the orange juice, honey and vegetables and bring to the boil, then turn down the heat and simmer for 10 minutes to cook the vegetables.
- Season with salt and pepper to taste and serve garnished with coriander.
