Chilli black beans and rice
- Heat oil in a pan, add chopped onion and diced red pepper (seeds removed) and cook over a medium heat for 5 minutes to soften.
- Add chopped garlic, chilli powder and cumin and cook for 1 minute more.
- Add canned tomatoes, black beans and chilli and bring to the boil then turn down the heat and simmer for 5 to 8 minutes.
- Season with salt and pepper to taste and serve garnished with coriander and with steamed rice on the side.
