Mussels with white wine and gremolata
|1 cup||White wine|
|1½ kgs||Mussels, green shell, scrubbed|
|1 to taste||Salt & freshly ground pepper|
- Heat wine in a large saucepan. Add mussels, cover pan and cook for 5 to 8 minutes, shaking the pan regularly until mussels open. Remove mussels to a serving bowl, add cream to the wine and simmer for 2 minutes then season with salt and pepper to taste. Strain sauce over mussels.
- Combine gremolata ingredients and scatter over mussels to serve.
