Satay pork stir-fry
- Heat vegetable oil, such as canola, sunflower seed or rice bran oil in a wok or large frying pan. Add thinly sliced pork steak and stir-fry over high heat for 5 minutes to brown all over. Remove to one side.
- Add grated fresh ginger, chopped garlic cloves and sliced onion to the pan and stir-fry for 2 minutes to lightly brown onion. Add frozen mixed vegetables, satay and soy sauces and stir-fry for 5 minutes until hot, adding a little water if necessary to cook vegetables.
- Return pork to the pan, toss and stir-fry for 2 minutes more. Serve in bowls scattered with chopped peanuts and fresh coriander.
Tip: Satay sauce is a spicy peanut sauce that can be purchased pre-made in packets from the supermarket.
