Crumbed fish with mashed spuds
- Season flour with salt and pepper and spread on a tray. Place beaten egg and milk in a shallow dish. Spread crushed cornflakes over another tray.
- Dip fish fillets in flour to coat, then in beaten egg, then in crumbs, pressing well to coat in a crust of crumbs.
- Heat a nonstick frying pan, add a little oil and pan-fry crumbed fish, in two batches if necessary, for 2 to 3 minutes on each side until golden brown on both sides and cooked through. Serve fish with mashed spuds and a steamed green vegetable.
Tip: When buying fish, take a deep breath. Fresh fish smells like the sea. If it smells fishy, it isn't fresh.
