A busy mum said this banana bread was a huge hit with her son, Zach, whose favourite treat is two slices of it coated with a generous smear of spreadable cream
- Preheat the oven to 180C.
- Spray a 25 x 15 x 8cm loaf tin with cooking oil and line with baking paper.
- In a large bowl, mash up the banana with a fork. Add in melted butter.
- Mix in sugar, egg and vanilla. Sprinkle baking soda and salt over the mixture, then sift in flour.
- Pour mix into the loaf tin and bake for 50 minutes.
