Roast sausages with apple and kumara
- Place sausages in a saucepan of cold water. Bring to the boil over high heat, then turn down heat and simmer for 5 minutes. Drain sausages and allow to cool a little.
- Heat oven to 220 degC. Wrap a slice of bacon around each sausage and arrange in a roasting pan. Scatter the bay leaves, wedges of kumara and red onion around the sausages, drizzle with oil, season with salt and pepper and roast for 15 minutes.
- Scatter apple wedges over the sausages and roast for a further 20 minutes, until the sausages are browned and the apple caramelised.
