Cheese and Ham Stuffed French Toast
1. Lightly butter bread. Use day-old bread (we use light wholemeal bread). Sandwich the ham and gruyere cheese between slices of bread to make two sandwiches.
2. Place egg and milk in a bowl, season with salt and pepper and beat with a fork to combine. Dip sandwiches into egg mixture, just enough for the bread to lightly soak up the mixture.
3. Heat a large nonstick frying pan over a medium heat. Add a film of oil to the pan, then add sandwiches and cook for 2 to 3 minutes on each side until they are golden brown and the cheese is melted.
4. Cut sandwiches in half to serve while hot.
Tip: If you're having friends round for breakfast or brunch, it's always fun to get everyone involved with the cooking. Get the adults cooking the French toast and flipping their own pancakes, and let the children get involved by having them help with simple preparation so they learn basic cookery skills.
