Roast lamb chops with cajun spiced pumpkin
- Heat oven to 220 degC. Peel pumpkin and remove seeds. Cut pumpkin flesh into 2cm cubes and scatter over the base of an oiled oven pan.
- Arrange lamb chops on top of pumpkin. Drizzle all over with lemon juice of 1 lemon and a little olive oil and scatter with Cajun spice mix. Season with salt and pepper.
- Bake for 20 to 25 minutes or until lamb is browned and pumpkin tender. Serve scattered with chopped coriander or parsley, and with sour cream on the side, if desired.
