Spicy sausage stew
- Place sausages in a saucepan, cover with cold water and bring to the boil. Turn down the heat and simmer for 5 minutes to partially cook. Drain and slice sausages into 3cm lengths.
- Heat the oil in a saucepan, add sliced leek and cook over a medium heat for 5 minutes until softened but not coloured. Add the spice mix and cook for 1 minute more.
- Add tomatoes, any tomato juice and grated carrot and cook over a medium heat for 10 to 15 minutes, until liquid is reduced. Adjust seasoning with salt and pepper to taste.
