Cinnamon apple pudding slice
- Heat oven to 180 degrees C. Line a 17cm x 27cm slice tin with nonstick baking paper. Peel, core and slice the apple (preferably Gala apple) and toss in a bowl with the juice from half a lemon, which will stop any discolouration.
- Place softened butter, sugar and vanilla in another bowl and beat with an electric mixer until pale and creamy. Beat in eggs, one at a time. Sift flour, baking powder and cinnamon over creamed mixture and then beat in briefly to combine.
- Spread the mixture over the base of the prepared tin. Arrange the sliced apple on top. Sprinkle the surface with extra raw sugar.
- Bake for 35 minutes or until the pudding slice is golden brown and set in the middle. Remove to cool in the tin for 10 minutes before serving warm with vanilla custard, if desired.
